It's hard to find this place, and sometimes harder to find it open. We stopped by on a Saturday afternoon just as things were winding down, but Roy Jeffrey still had some brisket and sausage left. He also had a few bottles of that famous BBQ sauce. No, this sauce wasn't made famous at R&G, but Roy became a bit infamous when he took that recipe from an early job as the pitmaster in Luling where he learned top make their unique mustard based sauce. He was then wooed away to Houston to bring that sauce recipe with him to Luling City Market. Now he's made his way to McMahan (also known as Whizzerville) to work the pits in this historic building.
When we arrived at about 2:00 in the afternoon, the place was empty. We grabbed a couple cans of High Life at $1.75 a piece, then settled down for a snack. The sausage link was well seasoned with plenty of smoke, but it was obvious that it had been sitting around a while. The casing was shriveled and the filling was dry, but a dip into that sweet sauce cured all. The brisket was also a tad dry, but had excellent flavor. The meat was plenty tender with loads of smokiness. The crust and smokering were well formed and the seasonings were just right. I still ended up dipping it into that addictive sauce.
It's no wonder Roy has made a name with that sauce recipe, but he also seems to know his way around a pit. I look forward to my next visit which I'll time closer to lunch time. Maybe I can get my choice of meats, and I'm sure the meat's quality will improve.
