Here's the story. A Texas style BBQ joint opens in Washington D.C., and all of those in our nation's capital yearning for decent BBQ are finally thrown a bone when Capital Q opens just a few blocks east of the White House by an UT grad. After success in D.C. he decides the next logical step is to expand from his Washington location, and open a second in Texas. What? Why does Texas of all places need with the second location of a Yankee chain?



From my visit, it's more like Galveston is stuck with the place. The meat I received on my visit was a poor excuse for "Texan BBQ" as the sign proclaims. The knife man at least knew what to do when I asked for fatty brisket, but the pitmaster needs a longer apprenticeship here in the Lone Star State. The fat in these slices was tough, chewy and they made the slices barely edible. The brisket lacked even a hint of smoke, and the crust was a dim brown color. It was just plain bad. Ribs were marginally better, but were also loaded with unrendered fat. They too had no smokiness and little flavor at all. I'm guessing that Texans will soon realize they don't have to settle for D.C.'s BBQ influence in our land of vastly superior 'cue.
