The ribs had a heavy rub, but little smoke flavor. The brisket was sliced, placed in a to-go container, then a liquid was poured over top. Odd. I don't know if it was the brisket or the poor man's au jus, but the brisket flavor could only be described as beef jerky.

I have been eating at Cackle & Oink BBQ in Sherman for about 5 years now and have never seen them 'pour liquid' on the brisket. True they do not have that heavy or overwhelming smoke flavor - rather a more delicate Apple Wood flavor that appeals to the more discerning. The award winning Cackle & Oink ribs are without equal. I am always impressed with their consistency and meticulous care in preparation and serving and overall cleanliness. Their BBQ sauce is very good - but I find their ribs and brisket are best enjoyed without sauce added. In a word - excellent BBQ.

I have been to Cackle and Oink three times and I never EVER have had them pour anything over the bristket. C&O has the best combo of meats and sides in Texas. The secret to great BBQ is can you eat the meat without sauce, the answer at C&O is yes.

He doesn't pour...he dips. It is au jus.
And for me, this is the best BBQ in the state.

The smoke flavor is very mild & sweet, as is the nature of apple wood.

There are plenty of places that serve inconsistent and overly smokey meat. Not at C & O. I go when Aaron's there, and I go when he isn't. It's always top-notch.

I go way back with the guy...all the way back to St. Louis. This is a great example of it. Darn similar to Pappy's Smokehouse in St. Louis.

Sides are all hand made and delicious too.

And, rarely will you find a place with better service.

Actually, I found they DO put a little 'gravy' on the brisket - just a touch - and whatever it is, it is delicious! Always consistent, tender - and more delicate flavor. People that don't like C&)]O are probably "into" that heavy-smoked flavor style of bbq. C&O is for the more discerning!

I've never had any kind of juice added to my brisket there and I've eaten there probably 50 or 60 times. The ribs are great too. Sounds like you need to go back and try them again. Maybe you went to the wrong joint. lol

I don't care if they add juice or not to the meat, the ribs are too sweet, and the brisket is a poor excuse for "Texas" BBQ. Obviously, Cackle and Oink wrote 3 or 4 reviews to cover up the warranted 1 star rating. The fact that two supposed reviewers use the word "discerning"? Give me a break, if you truly have a "discerning" palate then you will realize that you need to drive 30 minutes to Rudy's if you want anything that remotely tastes like real BBQ.

Juice or not, the ribs are too sweet and the brisket is a poor excuse for real cue. Obviously the folks at Cackle and Oink got a little sensitive when they read the review and tried to post several to defend themselves. It is obvious from the fact that no two people who are writing reviews about cackle and oink are going to use the word discerning. Fruit wood, juice, doesn't matter to me as long as it is good. When you slice brisket thin it helps cover up tough meat. The brisket tastes like pot roast, and the ribs taste like candy. When you have to put that much sugar on to get a bark, you are cutting corners. Drive to Rudy's in Allen 30 minutes away and at least get good brisket.

I did not make any posts other than this one. And we are NOT Texas BBQ. To each his own.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
