Alley Bar-B-Q

When the word "Bar-B-Q" is in the name, I expect more than just one meat, but brisket (chopped and sliced) is the only smoked meat offered here. The rest of the menu is filled with burgers and chicken fried items. I grabbed a sliced beef sandwich to go.



The meat had a great smokering and a good black bark, but it was a bit underdone. A bit chewy, but plenty moist, the meat packed a decent amount of smoke in bites with the crust. Overall, it was a bit better than the brisket down the street at Patek's, but it just needed more time on the smoker to tenderize and develop more smokiness.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
