Iron Works BBQ is located in a remodeled iron shop, and the place is still smoking. The baby back ribs had little with a good spicy rub and a nice sweet flavor. They lacked a strong smoke flavor, but were tender with a nice texture. The ribs were definitely sauced during and perhaps after cooking. The brisket here was passable with little smoke flavor and not much of a smoke ring. The fat was not well rendered, and it was slightly tough with little flavor. The ribs were better, and they cheated to get that flavor.

Beef ribs here are worth a try. Best item on the menu IMO. I wonder if they're sauced or just rubbed with brown sugar, because they definitely do have a sweet flavor. If its sauce, it's a different kind than what's on the table.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
