2010: The less than ideal location coupled with a not too recently resurfaced parking lot gave me great hope for a stellar BBQ experience. The place was dead save a few souls chatting with the owner about sports. He quickly got up to fill my order of a two meat plate with ribs and brisket.
Ribs had suffered from age. The meat was dry with little smokiness. While the meat came cleanly from the bone, it really needed some sauce for flavor. The brisket had even less smoke. While it made some good roast beef, great BBQ it was not. So much for assumptions.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.

The cole slaw at Tom's is an ice cream scoopful of dry shredded cabbage served with a dollop of Miracle Whip on top. Not recommended.
