Fat Daddy's has a full wait staff and a wider menu than just barbecue. This allows for odd side orders of sauteed onions and a bowl of gravy (which I did order, and it was from a can), but with food prepared in the kitchen it's hard to know which meats to order. In a meat market style setting, or even a cafeteria line you can at least get a glance at the meat before you commit.


Sadly, I committed to the pork loin. It must have been stored cold in the kitchen because they warmed it on the grill. Pork loin is hard enough to keep moist, and the grill sapped out all that was left in these bone dry slices. Ribs had the opposite problem of being mushy. There wasn't much smoke on either cut.


The brisket looked decent, but the first few bites were chewy with little seasoning. The smoke was stronger in the beef, but it didn't provide enough to make this a good plate of barbecue. Limp french fries and tasteless beans didn't help out either.


The only saving grace was a warm peach cobbler and a couple generous scoops of Blue Bell ice cream, but it wasn't enough to make me forget about the meat.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
