Space is cramped a bit inside the doors of Uncle Roy's where there's just enough room for a few tables. We grabbed our order to go and went outside to enjoy it at one of the picnic tables. What we got was one pretty plate of food.


They were out of cotija cheese for the corn which still got a nice dusting of spices over the melted butter, and this sweet corn made for a great side. Along with the nice pork ribs, it would have made a good meal. The ribs had a dark crust and thick rosy meat. Good smoke clung to the well seasoned meat and a slight chew along the edges was pleasing. The rest was a tray of disappointment. Beef ribs were covered in a sweet sticky sauce that didn't complement the tough meat, what little was left on the bone. Sausage was barely warmed through. A black crust and well rendered fat were good signs on the brisket, but it had been wrapped during cooking and during storage, and both flavor and texture suffered severely. Each bite felt like a soggy sponge and all the great flavor was long washed away. Luckily, I could just pick up another pork rib.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
