Who knows if this little make-shift trailer is even still along the highway, but the smoke was flowing and we were in a traffic jam. Stopping was a no-brainer.


All the meats here were grilled directly over mesquite wood, so it probably wasn't a big deal that they were out of brisket that probably would have been tough. The ribs were still tough, and the cheap commercial sausage was pretty awful, but the chicken had taken well to the grill. The meat was moist and well seasoned and went along nicely with the rice and corn on the cob. A garnish of spicy pickled carrots and jalapenos was an added bonus. Not bad for an unplanned pit stop.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
