Copious amounts of smoke and several pad locks define this small operation along State Highway 6 between Houston and Galveston. I guess this a rough area for meat thieves because Fay keeps a pad lock on every door into her smoker to keep out those looking for a free meal. They also help hold in the massive amount of smoke that seeps deep into the meat. Oak is used to fire up the smoker, then pecan is added to finish things off.
I ordered through a small screen covered window in the trailer parked next to the road. After ordering a combo plate of brisket and ribs, I learned that Fay had been running this place with her husband until he passed away four years ago. She's been open off and on since then, and plans to keep things going on a regular schedule.
The meats definitely had flavor. This stands out as the smokiest meat I've tasted in my travels. Both meats were tender, with ribs being more moist. The fat on the ribs was well rendered, and a deep black crust surrounded each rib. The high bark to meat ratio made them almost to smokey, so much so that I was unable to tell if she uses any seasoning. There was just little flavor beyond the intense smoke. Brisket had been sliced thin, and a heap of it was included. Each slice had a bit of fat left on it, which helped moisten the slightly dry meat. Although it to was smoky, the flavor was more dissipated than in the ribs. This is the cut I'll be stealing if she forgets to lock up next time I'm around.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. I think this is the first time i have ever seen you write TO MUCH SMOKE..
I think you're right.
Too much smoke?! Wow. Maybe she can sell some of that extra smoke to Dickey's and Sonny Bryan's.
